Freezer- Friendly

These are great for meal prep in advance to freeze and have throughout the week. Pop them into a toaster oven to reheat them!

Combine eggs, pumpkin puree, oat flour, and protein powder of choice in a bowl. Mix well until smooth. The mixture should be wet but not runny. If too runny, add more flour. Stir in cinnamon and any other seasonings of choice (nutmeg, cloves).

Preheat your waffle-maker. Once warm, butter each side. Dollop a spoonful of mixture onto the waffle-maker. Enough to cover the bottom, but not too much that it overflows. Cook for about 3-4 minutes, until outside turns golden brown.

Repeat until you run out of batter. This recipe will make about 4-6 waffles, depending on size. Top with maple syrup and fruits of choice. Enjoy!

1 scoop of vanilla protein powder

2/3 cup of oat flour

3/4 cup of pumpkin puree

a dash of cinnamon
